Such a refreshing and perfect salad for a hot summer day! Simple, easy, and flavorful ingredients. Also, since I have an insane amount of fresh cucumbers from my garden, I’m starting to just chop cucumbers and put them in every dish I make, and honestly, its never gone wrong. The salt from the feta and sea salt taste so delicious in contrast with the sweetness of the watermelon. Then the tangy acidic lime on top of it, mmmm just so good!

Tips for picking out a good watermelon — make sure it has a yellowish spot on it, that means it was on the vine , and on the ground long enough to ripen. Also apparently the more round the watermelon is (as opposed to oval) the sweeter it will be!
This is awesome. Reminds me in Israel everyone eats watermelon for dessert with rock cheese. I have to admit it didn’t sound good at all. Then I tried it. Amazing. This is a similar idea with more flavors. Holding on to this recipe.
