I’m a self-proclaimed snack queen. I’ve always loved snacks, and now with an ever-changing schedule and needing to be on-the-go at any moment, snacks have become a cornerstone of my identity.
Chia seed pudding is something I have in my fridge most days of the week (if it’s not, that means I’m out!). Chia seeds have an impressive nutrition profile, and their texture is unmatched: These little guys absorb their weight in water and transform from individual dry seedlings into a luxurious product. Chia seed pudding is a versatile breakfast, snack, or even dessert. Once you get the basics down (just three ingredients: Chia seeds, milk or dairy alternative, and sweetener), you can play around with all types of flavors.
Inspired by summer’s bounty, I’m sharing a peach and coconut chia seed pudding. Peaches add the perfect amount of sweetness and tartness, and coconut milk makes this snack ultra creamy. How can you say no to this? Check out this recipe, and let me know what flavor combinations you come up with!
