I recently promised that my Tomato Confit is a versatile powerhouse of a tool that can transform an unassuming tomato into something to jazz up any meal. I am delivering on that promise with this Jammy Tomato Toast!
After a long day of class and meetings, I headed to a Spanish bar and indulged in tapas with friends. While everything was delicious, one dish that was especially memorable was a tomato toast. They slathered a crispy piece of bread with a rich, tomato-based paste, drizzled with olive oil, and garnished with flaky sea salt. So simple yet so full of flavor!
Here is my take on that toast. I cut thick slices of rustic bread (I’m using an olive-studded loaf but any hearty bread works) and brush tomato oil all over. After a quick toast, I slathered a soft cheese on top and layer the tomato confit. A showering of freshly-ground black pepper, salt, and scallions seals the deal. Like any toast, this is your blank canvas. Whatever your tastebuds are craving that day, I say go for it. Going along with the Spanish and Mediterranean theme, I sometimes add sardines for extra saltiness or capers for a distinctive crunch. Now tell me that doesn’t sound good!
